Hampton Po Boy

Here’s a quickie take on the famous Po Boy fried oyster sandwich. The New Orleans classic gets its name from a local eatery that began serving sandwiches generations ago to laid off workers. “Here comes another poor boy,” is how goes the legend.

The Hampton Po Boy is a basic concoction that begins with freshly shucked oysters, dredged in equal parts corn meal and flour, then deep fried in oil that’s been flavored with potato chips.

The original choice of bread is a French loaf, such as a crusty baguette.  We use a simple hot dog roll, or whatever’s at hand, as long as the bread stays true to the essential rectangular shape.

Spread the bread with some of your favorite sauce. We use my secret sesame sauce, though fried oysters respond well to any sauce that tickles your taste buds; spicy sauce, hot or sweet, mustard, mayonaise, tarter etc.Slide in a leaf of bibb lettuce (or shredded greens if that’s your fancy). Add pickle, any that you enjoy.

Top with several deep fried oysters and drizzle with more sauce and a final spritz of lemon juice.
